Measuring only 3 to 3 1/2 inches long, 1/4- to 1/2-inch diameter, and weighing less than an ounce, they are perfect for salads and Asian cuisine -- not to mention their appeal to children! The plants grow 4 1/2 to 5 feet and average 3 ears per stalk, but the baby corn is ready to pick when the plant is just 18 inches tall. For heaviest yield, plant seeds 1 inch apart and harvest early. (The ears will remain viable on the stalk for several weeks after this point, but they will grow, thus losing their "baby corn" status.) Sow after last spring frost, when the soil is warm.
