Cylindra Beet is a uniquely shaped heirloom variety prized for its smooth texture, sweet flavor, and space-saving form. Unlike traditional round beets, Cylindra produces elongated, cylindrical roots that grow 6-8 inches long and about 2 inches in diameter—perfect for uniform slicing and easy harvesting. It is ideal for gardeners with limited space or raised beds due to its elongated shape. The rich, deep-red flesh is tender and sweet with minimal zoning, and the glossy, dark green tops are equally edible and nutritious.

Often called Formanova or Butter Slicer, this variety has been grown for centuries and is thought to have originated in the Mediterranean region. It is highly valued in the kitchen for its uniform size and smooth skin, which peels easily after cooking. The roots are excellent roasted, pickled, steamed, or grated raw in salads, while the tender greens can be sautéed or added to soups. Cylindra Beet stands out for its elongated shape, which allows for tighter spacing in the garden and easier slicing for canning or cooking.

Beet Cylindra thrives in full sun and loose, well-drained soil rich in organic matter. Seeds can be direct sown in spring as soon as soil can be worked or started indoors 4 to 6 weeks prior to last frost date.
