The 'Nicola' Potato, a tuberous vegetable, is known for its impressive yield of crack-resistant, oval-shaped potatoes. These tubers boast a smooth, thin skin that ranges from light brown to a golden yellow, with only a few shallow eyes. The flesh, a vibrant golden yellow, is firm and dense, transforming into a smooth, fine grain when baked, roasted, or boiled. With a mild, nutty, and earthy flavor, coupled with a waxy texture and low starch/high moisture content, the 'Nicola' Potato is a nutritious source of dietary fiber, magnesium, and potassium.
As an herbaceous perennial, usually cultivated as an annual, the 'Nicola' Potato belongs to the nightshade family (Solanaceae). This upright, semi-erect vining plant is adorned with white blooms and produces a high yield of potatoes per plant. To maximize yield, cover approximately 70% of the plant's stems with straw or compost as the foliage grows. These tubers are resistant to internal bruising, foliage and tuber blight, common scab, and blackleg, but crop rotation is recommended to minimize the risk of disease.
