The 'Nicola' Potato, a tuberous vegetable, is known for its impressive yield of crack-resistant, oval-shaped potatoes. These tubers boast a smooth, thin skin that ranges from light brown to a golden yellow, with only a few shallow eyes. The flesh, a vibrant golden yellow, is firm and dense, transforming into a smooth, fine grain when baked, roasted, or boiled. With a mild, nutty, and earthy flavor, coupled with a waxy texture and low starch/high moisture content, the 'Nicola' Potato is a nutritious source of dietary fiber, magnesium, and potassium.
As an herbaceous perennial, usually cultivated as an annual, the 'Nicola' Potato belongs to the nightshade family (Solanaceae). This upright, semi-erect vining plant is adorned with white blooms and produces a high yield of potatoes per plant.
