Stachys 'Helene von Stein' Lamb's Ear is a perennial plant known for its striking ornamental foliage. This variant of Stachys, also known as 'Countess Helen von Stein' or 'Big Ears', stands out with its larger and darker leaves, some reaching up to 12 inches long, twice the typical size of the species. Resembling the shape of a lamb's ear, the soft, fuzzy, grey-green leaves have a velvety texture and a silvery sheen. Although primarily a non-flowering variety, it may sporadically produce a few small flower stalks.
As a member of the Stachys byzantina species, also called lamb's ear, 'Helene von Stein' forms a low mound that spreads quickly through its creeping stems. Despite its rapid growth, it remains non-invasive. It serves as an ideal ground cover or edging in a rustic cottage garden, and also makes a stunning accent, border, or container plant.
